Arroz Con Pollo Recipe (Peruvian Chicken and Rice)

Arroz con Pollo Recipe: Peruvian Special 
Hi everyone, 
I love food and cooking, especially using spices and chillies, I'm also a huge South American cuisine fan so it's only natural that I start my new food page off with a gorgeous Peruvian dish. Arroz con Pollo is a very simple, purse-friendly dish, the ingredients are simple, but the Peruvian pasta de Aji Amarillo gives this dish amazing flavour and spiciness throughout. You can find this aji chilli paste and many others on, a Peruvian online retailer which several restaurants nationwide as well. 

I love how a lot of South American recipes use all chicken parts rather than just the breast which is what we tend to use for cooking here unless we're having a BBQ, so you really forget how tasty chicken legs can be when cooked in a simple manner. I chose to use chicken legs but you can choose drumsticks, thighs, legs, whatever you like! 


1 Medium chicken, cut into pieces, or selected chicken parts
1 Large onion, diced 
1 Pepper, diced 
1 Tin of sweetcorn 
4 Tbsp of olive oil 
3 cloves of garlic, finely chopped 
2-3 Tbsp of Aji Amarillo yellow chilli paste* (depending on how hot you like it) available here.
2 chicken stock cubes dissolved in 3 cups of hot water 
2 tomatoes, diced
500g of Jasmine rice (I use 1 full mug of rice for 2 people)
Salt and pepper to taste 

Step-by-step Instructions 
1. Combine some salt and pepper together and use your fingers to rub it onto the chicken. 
2. Heat the oil in a large pan. When the oil is hot, add the chicken pieces and fry until the chicken becomes golden brown and the skin becomes a little charred in places. 
3. Take the chicken out and set aside. In the same pan and oil, add the onion, garlic and pepper and fry for 5-7 minutes, stirring regularly. 
4. Next add the the tomatoes, rice, chicken stock, sweetcorn and Aji paste. Mix well and place the chicken parts on top. 
5. Cover the pan, turn down the heat once it's boiled and leave to cook for 10-15 minutes until the rice  and chicken are cooked. You'll see the rice slowly absorb the stock.
6. Add salt and pepper to taste and voila!
