Bourbon Bhuna Chicken Curry Recipe

Bourbon Buhna Chicken Curry
Hi beauties!
I was very lucky to receive 4 amazing curry sauces* from justingredients.co.uk to make my own curries with. The first one I decided to try was the Bourbon Buhna sauce as I LOVE smokey, liquor-infused sauces, AND it said this one was a good mix for chicken. I added my own choice of vegetables, so you can follow the recipe, or get creative too and add your own favourites in there!
Warning: The sauce has a lovely heat to it already, only add extra chillies IF you can handle it.

Serves 2
Prep Time: 10 minutes
Cooking Time: 30 minutes

Ingredients
Bourbon Bhuna Curry Sauce from justingredients.co.uk
2-3 chicken breasts (cut into cubes)
1 onion (chopped)
1 can of chick peas
1 courgette (cut into small cubes)
4 garlic cloves (crushed
Half a can of pineapple in chunks
1.5 mugs of basmati rice
1 tsp rock salt
5 tbsp olive oil
5-6 sprays of Fry Light oil
Salt and pepper to taste

Step-By-Step Instructions
1. Spray a large pan with your fry light (or use sunflower oil if preferred) and add the onion and 2 crushed cloves or garlic. Let it fry until the onion goes golden and soft.
2. Add the chicken, stir and allow to cook until it becomes golden and is no longer pink.
3. Once the chicken is nearly cooked add the courgette and chick peas and cook for 3-5 minutes.
4. Finally, add the Bourbon bhuna sauce and the pineapple chunks and allow to simmer for about 3 minutes before switching off the heat and adding salt and pepper to taste.

Cooking The Rice
1. Add the olive oil and remaining crushed garlic to another pan and allow the garlic to fry until golden.
2. Add the 1.5 mugs of rice and stir for 1-2 minutes on low heat until the rice is fully coated.
3. Once the rice is fully coated in the oil, add 4 mugs of water and 1 tsp of salt and let it simmer until the rice has absorbed all of the water.
