Cheesy Mexican Quinoa Bake
Hi beauties!
On a diet? Trying to eat a little more healthily, or simply cutting down on unnecessary carbs? Quinoa is a great new alternative to rice and couscous AND it's gluten-free! Protein is a great source, especially if you're dieting or trying to eat smaller portions because it fills you up for longer than carb-based proteins. 

This recipe shows that you can have a healthy, low carb, low-calorie meal without compromising on taste or great ingredients. 

Serves 2
Prep Time: 10 minutes
Cooking Time: 30 minutes 
Calories: 350 per serving 

Ingredients
120g Quinoa from Quinola.com
5-6 Sprays of Fry Light oil
2 Garlic cloves, crushed 
1/2 Pepper, chopped 
1 Onion, chopped
2 Jalapeno peppers (or a handful of chopped jalapeños in a jar)
1 Tin of chopped tomatoes 
1 Tin of red kidney beans 
1 tsp Paprika 
1 tsp Cumin 
1 tsp Cayenne pepper
40g Grated cheddar (reduced fact)
Salt and pepper to taste 



Step-By-Step Instructions
1. Pre-heat the oven to 190c. 
2. Cook the Quinoa according to the packet instructions. Usually takes about 20 minutes to boil. 
3. Fry half of the jalapeños, garlic and onion in some Fry light spray. Once browned, add the tin of tomatoes and red kidney beans and bring to a simmer for 5 minutes. 
4. Once the Quinoa has cooked, drain it and stir in the paprika, cumin, cayenne pepper and salt and pepper to taste. Mix well and add the tomato and vegetable mixture and combine. 
5. Place into a greased baking dish, top with the grated cheddar and add top with the remaining jalapeños. Bake for approximately 20 minutes until the cheese has melted.
